Hello again! Jess, Naturmend’s meditation consultant, here today on the blog. I hope that you
are all holding up okay during these uncertain times of isolation and physical distancing. It’s
been quite the journey for us all, individually and collectively, and I hope that you have all found
some kind of virtual support network to help you in any way you may need. Please join me at
noon daily, Monday through Friday, for a 20 minute gentle movement and meditation class on
Zoom. I have spent years studying and practicing qigong, yoga, mindfulness and meditation;
over time, I have woven them together into a unique practice that can easily be done on your
own after joining in on a class or two! I would love to have you join us soon over the next
couple of weeks, before I welcome my first baby into this world, expected arrival date June 1. With that being said, the last to join the daily meditation will be Friday, May 8th.
Being 35 weeks pregnant, I am constantly snacking on anything I can get my hands on these days! Here are the recipes for my top 2 favourite snacks to have on hand right now:
1 small container of greek yogurt
1/2 mini cucumber, grated finely
1 minced garlic glove (or half of 1 if you are not a garlic lover like me!)
1/2-1 freshly squeezed lemon (dependent on taste)
2 tbsp light oil
2 tbsp dill
salt and pepper to taste
Simply combine all the ingredients and enjoy with your favourite chopped veggies!
When I am prepping veggies for dinner, I usually cut up a few extra of everything and throw
them in a container in the fridge so they are always ready for snacking.
Soft Breakfast Cookies
Yields about 18, so feel free to half the recipe for less or you could try freezing them!
Preheat the oven to 350 and line cookie sheets with parchment paper.
2 cups rolled oats
1 cup whole wheat flour (or any flour you have on hand)
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
Mix well in a small bowl.
1/3 cup light oil
1/2 cup sweetener (honey, maple syrup, coconut sugar, brown sugar)
2/3 cup yogurt
2 tsp vanilla
In a large bowl, whisk the oil and sweetener until fluffy. Beat in eggs. Add yogurt and vanilla.
Pour the dry ingredients into the wet, mixing well.
Add in chocolate chips, raisins or any ingredient you enjoy with oatmeal!
Scoop and lightly flatten onto cookie sheets. Bake for 9-12 minutes, until golden brown. Enjoy!
