Shredded Beef – The Instant Pot Way

So… I have an instant pot and am over the moon. I love cooking with it and the ease with which it creates amazing dishes. When I received mine, the gift bearer said he was “giving me the gift of time”. I would agree. If you don’t have an instant pot, I’d look into it.  Here one of my dishes (a shredded beef) I used as a meal (with some roasted veg & quinoa) & later as a snack nestled in iceberg lettuce and later even still, over top and egg and avocado. The scenarios are limitless. 

Rub

1 tbsp of sea salt 

1 tbsp of paprika

2 tsp of garlic powder 

2 tsp of onion powder 

1 tsp of chilli powder 

Beef

3-4 lb of beef rump roast 

2 tbsp of coconut oil 

2 cups of beef bone broth 

Cover roast in rub and sauté in coconut oil until seared on all sides. Add bone broth. Cook for 50 min on high pressure. Let it rest for 10-15 min then release any remaining pressure. Take beef out of pot and shred then return to pot until ready to use. 

This dish is an excellent source of amino acids, heme iron, B2, B5, B6, B12, selenium, zinc, phosphorous, choline & potassium.
