Sauce and dips are the best parts of cuisine. Give me something crunchy and add a dip to it and I’m happy. This recipe came to me so naturally because I essentially took all of my favourite dips and sauces and put them into a corn tortilla.
What is the best part of donairs? Hummus and chicken.
What is the best part of tacos? Guacamole and their compact little shell.
So here you have it, probably the best combination of ingredients all in one to create a delicious donair taco!
This recipe is for one and will leave you with three delicious and very filling tacos. Tip-I always recommend batch cooking and saving all the ingredients for more meals during the week.
- 3 corn tortillas (organic)
- 1 chicken leg:
- 3 sun dried tomatoes
- 2 carrots
- spices: salt, pepper, cumin, paprika
- 2 big handfuls of basil
- hummus (I used store bought)
- guacamole (also used store bought)
- 2 vine tomatoes
- 1 handful of basil
- 1 clove garlic
- ¼ red onion
- salt & pepper
Preheat the oven to 375°F. Thinly slice the carrots and lay them on the bottom of your baking dish. Place the chicken on top and add the spices. Lay the sun dried tomatoes on top and add a bit of the oil they come in. Add the basil and place a lid or aluminum foil to cover. Cook for 45 minutes. When the chicken is cooked, let it cool then tear the chicken off and put aside.
While chicken is cooking make the bruschetta.
Chop the vine tomatoes into about 1” sized chunks. Chop the onion very finely. Press the garlic, or if you don’t have a press than grate it finely. Chop the basil using kitchen scissors. Add everything to a mixing bowl and stir well. Add salt & pepper and let sit.
Warm your corn tortillas.
Add a layer of hummus, then guacamole then scoop the bruschetta in a line.
Top with chicken and chopped kale.
