A kid and adult friendly snack for on the go. Leave out the maple syrup for those trying to avoid sweeteners. I love the minty flavour of these oat bars which gives this sweet snack a refreshing quality.

- 2 cup rolled oats
- 3/4 cup ground flaxseed
- 1/4 – 1/2 cup maple syrup
- 1 cup coconut butter
- 2 tbsp coconut oil
- 1 tsp Peppermint extract
Blend oats in blender for a few seconds and then set aside. Melt coconut butter, coconut oil and peppermint extract on low heat in large sauce pan. Take off of heat, then add oats and flaxseed to sauce pan and mix well. Line a pan (approximately 8’’ x 8’’) with parchment paper. Press mixture into pan evenly. Refrigerate for 1-2 hours. Cut into bite size pieces or bigger bars and serve.
Variations: Add chocolate chips to make it a chocolate mint bar.
