Grilled Veggies and Tempeh

You are also probably sliding into the best parts of summer – swimming, river hang outs, and BBQs!! Hopefully you love summer as much as I do, which is a lot. One of the best parts about summer is the fact that you get to eat outside – in the sunshine!! This recipe is meant for the BBQ and for outdoor hangouts.

 

What you’ll need:grilled veggies

  • Cedar or Maple Planks
  • 1 zucchini
  • 1 red onion
  • 1 head broccoli
  • 1 or 2 Assorted peppers
  • 1 package Smoked Tempeh
  • 2 full toe of Garlic
  • 3-4 tbsps Olive oil
  • 1 tsp each of: oregano, basil, salt & pepper
  • A man to operate a charcoal bbq (or at least this is on my shopping list 🙂 )

Method:

Chop up the zucchini, broccoli, peppers, and onion in big chunks. Place in mixing bowl with olive oil and spices and mix. The tempeh gets sliced. The garlic gets the top bit cut off and pour heaps of olive oil in there. yummmmmmm.

An innovative and useful tactic that I will share with you was to create a ‘tempeh barrier’ around the planks so that the grilled veggies stay in their home and not into the charcoal grill. Since I have zero technique for grilling I can’t tell you how hot it got or what, but we essentially had it on the grill until the vegetables were perfectly soft but crunchy.

 

This grilled veggie recipe is super tasty as is, but an afterthought I had would have been to add a sauce to it at the end. In fact THIS miso gravy sauce would probably be perfect. You’re welcome, this might be the most delicious thing you’ll eat all summer.
