Beets are one of my favorite vegetables. They are sweet, full of fiber and lots of vitamin C! To top it off, the greens are full of nutrients too! I always make a salad with the greens. No wasting here!
- 6 or 8 golden beets, sliced thin
- Oyster mushrooms
- 1 onion, sliced
- 3 cloves garlic
- Tandoori masala spice
- Salt and pepper
- Coconut oil
Add the beets in a frying pan with coconut oil over medium heat. Add the spices and garlic. Sauté for 15-20 minutes (until they are almost done). Add the onion. Sauté for another 5-10 minutes. Add the mushrooms. Add a little bit of salt (it releases natural juices from the mushrooms). Sauté for 7-9 minutes. Serve and enjoy!
