Paleo Coconut Pancakes
- 1/4 cup coconut flour (possibly more)
- 1/8 tsp baking soda
- Pinch of salt
- 1/3 – 1/4 cup coconut milk (or milk of your choice)
- 2 tbsp coconut oil
- 3 eggs
- 1-2 tbsp honey or maple syrup
- 1/2 tsp vanilla extract
- Butter for frying
Mix the dry ingredients, and the wet ingredients separately. Lightly stir together, mixing well, but not over-mixing. Melt butter in your frying pan, and make pancakes! Keep an eye on them, they cook very quickly and don’t have the tell-tale bubbles like other pancakes. They have a rich, sweet coconut-ty flavour so I recommend some fruit, and cooking up your favourite sausage to eat with them.
