Full Fat Mid-Day Snack

full fat snackA little bit of a change of pace, my diet of choice currently is now KETO (high fat, low carb). With SIBO restrictions as well, still being very cautious about which carbs I consume and avoiding starch and grains completely. Obviously sugar is already out of the question, except for the odd kombucha drink and a tiny bit of honey here and there.

I’ve noticed some changes already, being on keto for a mere 4 weeks. I’m not eating nearly as much food and some overbearing SIBO symptoms have toned down. It’s been beneficial so far, and as I’ve mentioned time and time again I think healthy fats are the cats meow. My body seems to agree as well and doesn’t mind the decrease in protein and even further tightening of carbohydrates.

My routine at the moment is meal prepping every four days. I have just enough jars in my house for three meals a day for four days and then my fourth meal of the day is a fat bomb, such as this one I am about to present. It’s a mix of treat and snack as the healthy fats (coconut oil, cacao butter, and nut butters) really fill me up while the raw chocolate base makes it feel like a dessert. Feels like a little cheat meal every day!

Ingredients & Method

Bottom Layer:

  • 200g cacao butter
  • 2 tbsp cacao powder
  • 2 tsp raw honey
  • 1 tsp maca powder

In a double boiler melt ingredients together (feel free to make the chocolate base sweeter if you prefer) and let cool. Pour into small sized muffin tin liners (approx 1-2 tbsp) and place in freezer to set for about 15-20 minutes. Meanwhile, start the middle layer process.

Middle Layer

  • 1/4 cup coconut oil
  • 1/2 cup coconut butter

Melt & mix in a double boiler and once the base layer has set pour about a tbsp on top. Again, place in freezer to set.

Top Layer

  • 1/2 cup almond butter
  • 1/4 cup St. Francis Ghee & coconut oil mix
  • 1/2 cup shredded coconut

This should mix fairly easily without the help of a double boiler. Pour the remaining mixture on top of the other layers to finish it off and let set to cool in the freezer.


These obviously keep better in the freezer and will melt pretty quick at room temp. I ended up making 24 fat bombs and 12 additional that were just chocolate so according to my calculations each treat has 16.75g of fat and about 0.375g of carbs. Great for an afternoon pick me up to tide you over until dinner. Delicious!
