Originally a stuffed pepper recipe, this has morphed into one of my favourite go-to healthy meals for busy weeks. Sometimes I stuff the peppers, other times I cut them up and throw them in.
- 1 onion
- 4 garlic cloves
- 1 pkg ground turkey
- 1-2 cups uncooked quinoa
- 1 tsp ground pepper
- 1 tbsp chilli powder
- 1 tbsp ground cumin
- 2 cups fresh spinach
- 1-2 cups salsa
- 4 peppers
- Optional: More of your favourite vegetables, avocados, fresh basil to top, cheddar cheese and plain Greek yogurt
Step 1. If stuffing the peppers: Cut the peppers in half lengthwise from the stem to the bottom. Remove the white centers. Place in a baking dish, cover with foil and bake for 15-20minutes at 375F. Follow steps 2 and 3, and then place the mixture into the peppers. Cover the dish with foil and bake for about 20 min.
If you are not stuffing the peppers, go straight to step 2.
Step 2. Cook the quinoa according to the package directions in one pot.
Step 3. In a large frying pan, sauté the onion and garlic in a small amount of oil. Add, and cook the ground turkey. Stir in the spices, salsa, spinach, and cooked quinoa. Add in any other vegetables you would like to add, including cut up peppers if you are not stuffing them.
Step 4. Top with avocado, fresh basil, cheese and plain Greek yogurt
