I usually eat my plantains savory – pan fried with sea salt and avocado. But today I was craving a sweet. I just LOVE maple syrup and butter together in anything. The mix of flavour is perfect, creamy sweetness. I had an idea that it might just go well with plantains and was I ever right!
Three ingredients comprise this recipe making it super easy and fast to whip up for a treat or dessert when entertaining.
- 1 plantain – ripe enough to have brown spots
- 1-2 tbsp butter – grass fed and/ or organic is best (can substitute coconut oil or olive oil)
- 1-2 tbsp dark maple syrup
Melt butter in frying pan over medium heat. Slice plantain into 1/4 inch slices and layer in frying pan. Fry each side until golden brown (about 3-4 min). I like to add the maple syrup when I turn the plantains to the 2nd side, that way it caramelizes a bit. Yummy!
Once maple syrup is thick and plantains are browned, dish into small bowl and enjoy!
1 plantain serves 1-2 people, so increase as needed for your purposes.
