Black Bean Salad

I’m loving the sunny days we’ve been having, and sunny days always make me want to reach into my recipe box for fresh, tasty salads. This one is loaded with colour and flavour!

  • 1 can (19oz) black beans
  • 1 can (14oz) corn
  • 1 cup grape tomatoes
  • 1-2 cups chopped red, orange or yellow pepper
  • 1 cup mango
  • ½ green onion
  • Cilantro (optional)


  • 2 tsp cilantro
  • 2 Tbsp lime juice
  • 1 Tbsp olive oil
  • ¼ tsp salt and pepper
  • 1/8 tsp cumin
  • 1/8 tsp chili powder
  • 1 cup avocado

Chop and stir together the black beans, corn, tomatoes, peppers, mango and onion in a bowl. Separately mix the dressing together, and then stir into the first bowl. Top with avocado and cilantro if desired.
