recipe: kale & black lentil salad

With the heat this Summer in Calgary I’ve found myself craving more vegetarian lighter meals. I’ve rediscovered beans in this process. The latest one I’m playing around with are black lentils, also known as beluga lentils. They seemed a natural fit with black kale. I find them surprisingly filling and tasty. My latest summer salad favourite – Enjoy!

  • Kale, black lentil salad
  • 1 head of kale
  • 1 head of romaine
  • 1/2 cup cooked black (beluga) lentils
  • 1 large carrot sliced thin
  • 1 large red pepper sliced thin


  • 2 tbsp Olive oil
  • 2 tsp balsamic vinegar
  • 1 tbsp stone ground mustard
  • Pepper and salt as desired
