recipe: summertime antioxidant mango salsa

During the summer months when things get a little hotter, I enjoy sweeter fruits and cooler salads and salsa. And nothing goes better then the sweetness of a mango with the spiciness of a red onion.Vegetable and fruits food still-life

Not only is this recipe the perfect combination of sweetness and spice, it is loaded with powerful health benefits.

The mango in this salsa is high in fiber, and antioxidants like vitamin A, vitamin C, flavonoids and beta-carotene. Mangoes also contain a digestive enzyme, which helps break down proteins, aiding digestion.

Red onions contain quercetin, a bioflavonoid helpful for the scavenging of free radicals. It also has properties that help support your immune system. Cilantro not only adds great flavor, it also contains antioxidants, and has strong detoxification properties. All the more reason to add it to your diet regularly.

You can serve this salsa with tortillas or baked yam slices. You can even serve this on your favorite BBQ’d meat.


  • 2 mangoes, sliced into small chunks (Ataulfo is my favorite)
  • ½ red onion, chopped
  • ½ cup cilantro, chopped
  • 1 lime
  • Pinch of sea salt


Prepare mango, red onion, cilantro in a bowl. Slice the lime and squeeze the juice into the bowl, sprinkle with sea salt and mix.
