recipe: blender chia pudding
Being a busy person that I am, yet insistent on healthy food, I like an easy and fast recipe like this one. All you need is a blender and 20 minutes. Prep time is actually 2 minutes, but you do have to wait for the chia seeds to gel after blending. You can make this recipe at night for your morning breakfast if you have limited time in the morning. Or have this recipe for dessert for a pre-bed snack.
- 1 tbsp chia seeds
- 1 cup coconut milk (or other milk of choice)
- 1 tsp cinnamon
- 1’’ chunk of ginger peeled
- 1 medjool date (optional)
- 1/2 banana
Blend all ingredients from this recipe in a blender until smooth. Pour into bowl and let sit for 20 minutes. Enjoy!
