kale & white bean salad

I love salad. I eat it two and often three times a day. As winter approaches and the cold weather starts to creep in, I start to crave heartier salads. Here is a hearty salad version that is super quick and can be eaten as a meal or as a side dish.


kale salad

  • 1 head of kale (lacinto kale is best)
  • 2 cups of cooked white beans
  • 1/2 yellow pepper
  • 1/2 medium onion sliced thin
  • Sea salt to taste
  • Black pepper to taste
  • 1 tbsp olive oil
  • Juice of 1 small lemon

The other cool thing about this recipe is that you can store it in the fridge and it stays fresh for several days.
