Slow cooker coconut chicken curry
In today’s day and age, finding time to get everything done that we need to in a day can be challenging. Trying to cook nutritious meals for your family just adds one more stress and item to your already overwhelming list. That is where a slow cooker can come in handy. Put your ingredients in before leaving for work, get home from your long, possibly taxing day and dinner will be ready! Also since we are coming into autumn, its nice to have warming foods. I have an easy recipe for you that takes minutes to prepare and is super delicious!
- 4-6 chicken thighs, skinless
- 1 can coconut milk
- 1 jar coconut curry paste (there are some good ones out there like Amaya’s)
- 1 small onion, chopped
- 1 clove garlic, crushed
- 1 cup frozen peas
- Add chicken to the bottom of the slow cooker. Add onions, garlic and peas.
- Cover with coconut milk and curry paste. Set cooker to low and let it cook for 6-8 hours.
- Done! Garnish with some cilantro if you like.
